Black Bean Tomato Salad with Ginger
1.5 C Black Beans, rinsed &amp; drained.
1 large tomato, seeded &amp; diced.
1/2 small red onion, finely diced.
Finely minced fresh ginger, to taste.°
Juice of 1 lime.
Olive Oil to dress.
Freshly ground black pepper, to taste.

° if served immediately, use more ginger. If packed for lunch, use less.

    * Diced baked sweet potatoes
    * Diced Fuji apple [approximately equal amounts of each]

Dressing:

    * orange juice [juice from one navel orange]
    * olive oil [enough to mix with the oj]
    * finely minced fresh ginger, to taste [a tablespoon]
    * sea salt to taste
    * mix well
    * toss with finely chopped walnuts just prior to serving.</description>

I&#039;ve also cut the cucumber lenthwise (2 inch pieces) and had nori on the side so people can wrap the nori around the cucumber if they want. tasty :)
