    EP 54: Braised Tofu

    Braised Tofu with Mushrooms
    Serves: 3-4
    Difficulty: Easy
    Prep Time: 5 Minutes
    Cook Time: 25 Minutes

    A tasty way to serve up tofu!

    3/4 pound tofu
    1 clove minced garlic
    1/2 tsp minced gingerroot or ground ginger
    1 tbsp rice vinegar
    1 tbsp soy sauce
    1 cup mushrooms of choice
    1 1/2 vegetable broth
    1 tsp toasted sesame oil (optional)
    2 scallions, coarsely chopped (optional)

    Press the tofu between paper towels to remove most of the liquid. Cut it into cubes and place in a flat dish with sides. In a small bowl, combine garlic, ginger, vinegar and soy sauce. Pour marinade over tofu and toss to coat. Marinate for an about an hour.
    Spoon tofu and marinade into a large skillet and add veggie broth and mushrooms. Bring to a boil, and then reduce heat to medium-low. Simmer, uncovered, until tofu is cooked through and broth is reduced by half, about 10-15 minutes. Add sesame oil and sprinkle with scallions if desired.

    Notes
    Serve over rice and use the broth to season the rice.
    This is good with or without the sesame oil and scallions.
    Use any type of mushrooms that you like: shitake, button, baby bella, etc… and cut up to any size you like.

      Carol, I had the exact opposite reaction… wondering if this is when my favorite cooking show, which I’ve recommended to half a dozen people, starts to jump the shark. If Vegan A Go-Go becomes like every other Vegan video podcast in existence, what will distinguish it?

      Right now, Vegan A Go-Go has no competition–if you want well-produced videos on Vegan cooking centered around produce and grains, you come here. If it’s recipes become like the others, heavily centered around soy, then there are TONS of other options, and the specialness is gone.

      You have a great show, with wonderful productions values. Eggplant with Mushrooms would’ve been a nice recipe to do. Tofu with Mushrooms is something probably dozens of other shows have done. Please don’t become a clone of all the other shows.

      I’m a new vegan & I really appreciate all of your recipes & videos. All of this is new to me & I really appreciate your demonstrations. I’ve seen a few other podcast websites & don’t think they have the quality as yours. The recipes are not as easy or as appetizing as yours. You make cooking vegan look so easy. I have passed on your website to many friends vegan & non-vegan alike. Many of your dishes can be altered or added to a meat dish. That’s very helpful for me since my husband & son are not vegan. (yet)
